BODEGAS PABLO PADÍN

Since the Middle Ages, the Camino de Santiago has influenced Galician culture through the pilgrims who arrived from all over the world. Among them, many monks visited Galician monasteries and shared different winemaking techniques, which our ancestors skillfully adapted to the unique characteristics of native Galician grape varieties. Over generations, this knowledge was refined and perfected, shaping the Rías Baixas Albariño winemaking process we follow today.

Bodegas Pablo Padín began crafting wine using the family’s traditional artisanal methods. Over time, the winery evolved, incorporating cutting-edge technology and modern facilities, resulting in high-quality Albariño wines. Within this framework, our approach to Rías Baixas Albariño vinification combines the wisdom of tradition with technical precision and innovation.

Before harvest, each vineyard plot is analyzed to determine which parcels offer the best conditions for the production of each of our wines. The grapes are handpicked and transported in ventilated crates to preserve their quality.

Once in the winery, the grapes undergo strict quality control. They are carefully analyzed and pass through a selection table, where unsuitable clusters are removed. The next step is destemming, which separates the stems and classifies the berries — essential stages in the Albariño vinification process within the Rías Baixas Designation of Origin.

The grapes selected for our SEGREL Albariños undergo cold maceration at temperatures between 5 °C and 8 °C to obtain wines with greater aromatic intensity, enhancing the primary aromas of the variety. Using modern pneumatic presses, the free-run must is extracted to produce SEGREL Ámbar, while the first-press must is used for SEGREL Albariño.

The different musts ferment in stainless steel tanks under controlled temperature, and after 5–6 months of ageing on fine lees, the new vintage is bottled in small batches throughout the year. The winery’s temperature-controlled production and storage rooms help slow the ageing process, ensuring that our Rías Baixas Albariño wines retain their freshness, purity, and Atlantic character.
