BODEGAS PABLO PADÍN

In the early 16th century, Benedictine monks in southern France crafted the first documented sparkling wines. Years later, Dom Pérignon brought that knowledge to the wines of his abbey in the Champagne region of France.

It was not until the early 20th century that the first Galician “champagnes” appeared, made following the méthode champenoise. These wines enjoyed moderate success among the upper classes of the time. However, by the late 1980s, attempts to revive this traditional method met with limited success.

The new millennium marked a turning point for Bodegas Pablo Padín, with the arrival of a talented young oenologist and the beginning of a generational transition in the winery’s leadership. This period sparked renewed curiosity about the winemaking potential of the Albariño grape.

In this context, Bodegas Pablo Padín emerged as a benchmark in the production of Rías Baixas Albariño sparkling wines, blending the traditional method (méthode traditionnelle or champenoise) with the full potential of grapes from the Val do Salnés.

Our sparkling wine captures the fresh Atlantic essence, with fine, persistent bubbles and the distinctive character of wines from the Rías Baixas Designation of Origin.
